Breakfast Burritos

Breakfast burritos. Okay, no matter how many times I make these, I can never bring myself to eat them for breakfast! That said, I love to eat them post ride. Plenty of carbs, protein and healthy fats in these delish burritos.

2 Flour or corn tortilla wraps

½ an onion very finely sliced

½ an avocado sliced

1 egg

1 sausage (this could be a veggie sausage or a meat sausage), cut into chunks

Jalepenos

Olive oil (or your oil of choice) and butter

 

Tomato Salsa

2 tomatoes finely chopped

½ an onion finely diced

1 teaspoon of white wine vinegar

Squeeze of lime juice

Chopped coriander (optional)

Salt and pepper

Mix the ingredients together and set aside in a bowl. Do this prior to making the burritos to allow the flavours to mingle!

For the burritos, beat the egg in a bowl and set aside. In a frying pan, add some olive oil and start to sauté the sausage, when cooked set aside. Add the onion and sauté until soft and translucent (around 5-minutes). Add some butter to the pan and pour in the egg, scrambling gently for about 4 or 5-minutes until just cooked.

Divide the eggs and onion between each tortilla, and add some sausage to each one. Add a few slices of avocado and a tablespoon of salsa to each tortilla and some additional coriander if you like. Roll up the tortilla and enjoy with as many jalapenos as you like :-).
